Mixed Greens
Mixed Greens is an moderately easy dinner. Made with 2 lb. turnip greens, 1 lb. mustard greens, 1 lb. spinach, 1/4 c. salt and 1 lb. salt pork or bacon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Strip greens from stalk.
Wash in cold water in which the salt has been added.
Wash 3 or 4 times in cold water or until water is clear of grit and sand; drain thoroughly.
In an 8-quart pot, put 2 quarts of boiling water; add rinsed salt pork or bacon and onion. Add all the greens, sugar and salt to taste.
Cover tightly and simmer 2 hours.
If frozen greens are used, simmer 1 hour.
Add crushed red pepper for extra flavor.
Serve hot.
