Miracle Cheesecake
Miracle Cheesecake is an moderately easy dinner. Made with 1 pkg. lemon flavored gelatin, 3/4 c. butter, melted, 3 tbsp. lemon juice, 1 tsp. vanilla and 1 (8 oz.) pkg. cream cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Dissolve gelatin in boiling water.
Cool until almost set. Cream together cheese, sugar and vanilla.
Fold in gelatin.
Mix well.
Fold in whipped evaporated milk into gelatin mixture.
Add lemon juice.
Crush graham crackers into fine crumbs and add melted butter or margarine.
Firmly pack 2/3 of crumb mixture in bottom and sides of 9 x 13-inch pan.
Add filling and sprinkle with remaining crumbs.
Chill several hours.
Cut in squares and serve. (This can be made in advance and frozen.
Thaw slightly before serving.)
