Minted Zucchini
Minted Zucchini is an easy dinner. Made with 1 tbsp. butter or margarine, 1 c. diced onion, 2 tbsp. chopped fresh mint or 1 tsp. mint flakes, 2 tsp. oil and 4 c. thin zucchini sticks, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine butter and oil in large skillet and heat until butter melts.
Add onion and saute over high heat about 1 minute.
Stir in zucchini.
Reduce heat to low.
Cover and cook, stirring occasionally, until zucchini is tender, about 3 to 4 minutes. Stir in mint and cook an additional 30 seconds.
