Minted Nuts
Minted Nuts is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. water, 1 tbsp. light karo (corn syrup), 1/2 tsp. salt and 6 marshmallows, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Slowly cook sugar, water, corn syrup and salt.
Remove from heat just before syrup reaches soft ball stage.
Add marshmallows; stir until melted.
Add peppermint and nuts; stir with a circular motion until every nut is coated and mixture begins to look creamy.
Empty on waxed paper; cool, then separate.
May be stored in cans for weeks!
