Minted Ambrosia
Minted Ambrosia is an moderately easy dinner. Made with 1 1/2 c. pineapple chunks, 2 grapefruit, segmented, 2/3 c. sugar, 2/3 c. water and 2 tsp. grated orange rind, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place pineapple chunks and grapefruit tissue-free segments in a covered container. Cook sugar and water until thick, about 5 minutes. Add orange rind and mint flavoring.
Pour over fruit and refrigerate until thoroughly chilled. Spoon into compotes.
Top each with coconut. Garnish with cherry and fresh mint leaves. Makes 6 servings.
