Mint Dazzler
Mint Dazzler is an moderately easy dinner. Made with 2 c. vanilla wafers or graham cracker crumbs, 6 tbsp. melted butter, 1 1/2 c. powdered sugar, 1/2 c. butter and 3 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Blend vanilla wafers or graham cracker crumbs and melted butter; press into a 9 x 13-inch pan.
Cream the powdered sugar and butter; add eggs, one at a time, beating after each addition.
Add melted chocolate.
Beat until light and fluffy.
Spoon over crumbs in pan.
Refrigerate.
Whip the cream (or use Cool Whip); gently fold in the marshmallows.
Spread carefully over the chocolate layer.
Sprinkle crushed mints over the top.
Refrigerate at least 3 hours before serving.
Cut into squares and serve.
