Miniature Cheesecakes
Miniature Cheesecakes is an moderately easy dinner. Made with 2 (8 oz.) pkg. cream cheese, softened, 1/2 c. sugar, 3 eggs, 1 tsp. vanilla and vanilla wafers, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Beat together cream cheese, sugar, eggs and vanilla on medium speed for 10 minutes.
Place a vanilla wafer on the bottom of muffin tin lined with cupcake papers. Pour filling in each one, 3/4 full.
Bake at 375Β° for 10 to 15 minutes.
Top with pie filling or jam.
For a bigger batch, use 3 packages of cream cheese and 2/3 cup sugar.
