Miniature Cheesecakes
Miniature Cheesecakes is an moderately easy dinner. Made with 24 vanilla wafers, 2 (8 oz.) pkg. cream cheese, softened, 3/4 c. sugar, 2 eggs and 2 tsp. lemon juice, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Line cupcake pans with liners (24).
Place a vanilla wafer in bottom of each liner.
In a small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy.
Fill the liners with the cream cheese mixture.
Bake in a 375Β° oven for 15 to 20 minutes or until set.
Top each with a spoonful of filling and a spoonful of nuts.
Serves 24.
