Mini Cheesecakes is an moderately easy dinner. Made with 2 eggs, 2 pkgs (8 oz) cream cheese, 1 cup sugar, 1 tbsp vanilla flavoring and cupcake liners, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven 350 degrees.
Mix eggs and cream cheese.
Add sugar and vanilla, mix until fluffy.
Place one vanilla wafer in each cupcake liner in a muffin pan.
Fill liners 3/4 full with cream cheese mixture.
Bake for 10 minutes.
Let cool.
Top with 1 Tbsp of pie filling.
Chill.
