Mini Cheesecakes is an moderately easy dinner. Made with 2 (8 oz.) pkg. cream cheese, 1 c. sugar, 2 eggs, 1 tsp. vanilla flavoring and vanilla wafers, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat cream cheese until light and fluffy.
Gradually add sugar, mixing well.
Add eggs, one at a time, beating well after each egg.
Stir in vanilla.
Place vanilla wafer in muffin paper and pan and fill with cream cheese mixture.
Bake at 350Β° for 20 minutes. Chill overnight.
Top with pie filling.
