Mini Cheesecakes
Mini Cheesecakes is an easy dinner. Made with 8 oz. cream cheese, 1/3 c. granulated sugar, 1 egg, 1 tsp. vanilla and vanilla wafers, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 350°.
Combine cream cheese, sugar, egg and vanilla in mixing bowl.
Beat with electric mixer until mixture is light and fluffy.
Place a vanilla wafer in the bottom of the baking cups, about 8.
Spoon cream cheese mixture evenly into cups.
Bake 15 minutes at 350°.
When cool, they can be topped with pie filling or pineapple.
