Mini Cheese Cakes
Mini Cheese Cakes is an moderately easy dinner. Made with 3/4 c. graham cracker crumbs, 2 tbsp. soft margarine, 1 egg, 1/2 tsp. vanilla and 1 can pie filling containing cornstarch (cherry, apricot or blueberry have worked best for me), this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix crumbs and margarine.
Put in cupcake papers and press down with bottom of a glass.
Beat cheese, egg, sugar and vanilla until smooth.
Pour over crumbs in cupcake pans.
Bake at 375Β° for 10 minutes.
Cool completely.
Garnish with pie filling.
