Mini Cheese Cakes
Mini Cheese Cakes is an easy dinner. Made with vanilla wafer cookies, 2 (8 oz.) pkg. cream cheese, 1/2 c. sugar, 1 tsp. vanilla and 2 eggs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Soften cream cheese to room temperature.
Blend with 1/2 cup sugar until creamy.
Add vanilla and eggs; blend well.
Place vanilla cookie into paper muffin cup.
Place into muffin pan. Spoon cream cheese mixture into cups.
Bake for 25 minutes at 325Β°.
Top with cherries, peaches or strawberries.
