Mini Cheese Cakes
Mini Cheese Cakes is an moderately easy dinner. Made with 2 (8 oz.) pkg. cream cheese, 2 eggs, 1 c. sugar, 1 tsp. vanilla and vanilla wafers, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350°.
Combine the first 4 ingredients in mixer until smooth.
Put cupcake holders in muffin pan.
Place vanilla wafer in bottom of cupcake holder.
Fill 1/2 to 2/3 full with cream cheese mixture.
Bake for 20 to 25 minutes at 350°. Cool; top with pie filling.
