Mini Blintzes
Mini Blintzes is an moderately easy dinner. Made with 1 lb. cream cheese, 2 egg yolks, 1/2 c. sugar, 2 lb. pepperidge farm white bread and 1/2 lb. melted butter, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 400Β°.
Cream egg yolks, 1/4 cup of the sugar and cream cheese.
Cut crusts from bread.
Roll each slice thin with rolling pin.
Spread with cream mixture.
Roll and dip with melted butter and then in cinnamon and sugar mix.
Cut pieces in half and freeze.
Bake until brown, 10 to 15 minutes.
