Minestrone Casserole
Minestrone Casserole is an moderately easy dinner. Made with 1 lb. bulk mild italian sausage, 1 medium stalk celery, coarsely chopped (about 1/2 c.), 1 pkg. hamburger helper mix for spaghetti, 1 (16 oz.) can whole tomatoes, undrained and 1 (16 oz.) can whole kernel corn, undrained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Oven to 375Β°.
Cook sausage and celery in 10-inch skillet over medium heat, stirring occasionally, until sausage is done.
Drain.
Mix sausage mixture, spaghetti, sauce mix and remaining ingredients in ungreased 3-quart casserole or rectangular baking dish (11 x 7 x 1 1/2-inch).
Break up tomatoes.
Cover and bake about 50 minutes or until hot and bubbly.
Let stand uncovered about 5 minutes before serving.
Yields 6 servings.
