Minestrone
Minestrone is an impressive dinner. Made with 1 onion, finely chopped, 1 to 2 cloves garlic, 1 1/2 c. celery, chopped, 1 1/2 tbsp. olive oil and 2 large cans peeled tomatoes or 4 c. fresh tomatoes, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute onion, garlic and celery in oil until soft.
Crush garlic.
Add tomatoes and herbs.
Simmer the soup gently while you prepare vegetables, beans or grains you decide to use.
Thirty (30) minutes before serving soup, add beans, noodles or grains and vegetables.
After combining all the ingredients, bring to a boil. Simmer briefly and correct the seasonings to your liking.
If you like, top each bowl of soup with fresh grated Parmesan cheese. Great with fresh cornbread or French bread.
This soup is even better the next day!
