Mincemeat Fruit Cake
Mincemeat Fruit Cake is an moderately easy dinner. Made with 1 c. firmly packed light brown sugar (or raw), 2 eggs, separated, 2 c. mincemeat, 2 c. sifted flour and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cream sugar with shortening, then beat in egg yolks.
Beat well, then stir in mincemeat.
Stir flour with the baking soda and salt.
Combine with dates and nuts, then add to batter.
Mix well and fold in stiffly beaten egg whites.
Turn into a large bread tin which has been greased and lined with waxed paper.
Bake at 300Β° for about 1 1/2 hours.
Cool on wire rack thoroughly before slicing.
Serves 8 to 10.
