Mincemeat Cake
Mincemeat Cake is an moderately easy dinner. Made with 2 c. mincemeat, 2 c. nuts (pecans or walnuts), 1 tsp. vanilla, 1/4 c. rum or cognac (may also use orange juice) and 1 tbsp. grated orange rind, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix the first 8 ingredients together.
Gradually add flour, sugar, soda and salt.
Pour into greased and floured tube pan. Bake 2 hours at 325Β°.
