Migas
Migas is an moderately easy dinner. Made with 4 eggs, well beaten, 1 chopped onion, 1 chopped green pepper, 6 tortillas, cut into small bite-size pieces and 1 small can chopped green chilies, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Saute onion and green pepper until onion is clear.
Next, add tortilla bits and stir until tortillas are cooked just a bit.
Put green chilies into beaten eggs and pour over tortilla mixture. Scramble eggs until done; turn off heat.
Add tomato sauce and stir briskly into mixture until mixture is well covered; add Cheddar cheese and let melt.
Serve with picante sauce, if desired.
