Midnight Cake
Midnight Cake is an moderately easy dinner. Made with 1/2 c. shortening, 1 1/4 c. sugar, 2 eggs, 1 c. hot water and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cream shortening, add sugar gradually, and cream until fluffy.
Blend in well beaten eggs, slowly.
Add hot water to cocoa, and mix until smooth.
Stir to dissolve completely.
Sift flour, salt, soda, and baking powder together, and add to cream mixture alternately with hot water and cocoa mixture.
Blend in vanilla.
Pour into a 8-inch square pan; bake 30-55 minutes in a moderate oven 320-350Β°.
