Microwaved Mashed Potatoes
Microwaved Mashed Potatoes is an easy dinner. Made with 3 to 4 medium potatoes, peeled and cubed, 1/4 c. water, 1/2 stick margarine and 1/8 to 1/4 c. milk (use more or less for desired consistency), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In microwave bowl with lid (my preference is clear Pyrex), place potatoes with water.
Cook on full power for 13 minutes, stirring thoroughly once halfway through cooking time.
Place margarine in bowl; leave covered for 3 to 4 minutes.
Mash potatoes well.
Add milk slowly for desired consistency.
Serve with more margarine, salt and pepper.
Serves family of 5 well.
