In 3-quart bowl, cook sugar, syrup and water 12 minutes and 30 seconds on High power (should be fine thread).

Add salt to egg whites and beat them on high speed until stiff.

Slowly pour syrup in a thin stream into the egg whites, beating constantly, until mixture loses its shine and thickens.

Stir in vanilla and nuts, if desired.

Drop by teaspoon at once on waxed paper or foil.

Makes about 30 pieces.

Use a heavy mixer to beat.

Hand mixers do not have enough power.
