Mexican Squash
Mexican Squash is an moderately easy dinner. Made with 5 to 8 yellow squash, 3 tbsp. minced onion, 6 tbsp. butter, 1 1/2 c. cheddar cheese, grated and 1/2 to 1 can ro-tel tomatoes and green chilies, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Peel squash and slice.
Cook with minced onion until tender. Drain well and place in a casserole with 4 tablespoons of butter, cheese, tomatoes, salt and pepper.
Stir all ingredients.
