Mexican Soup
Mexican Soup is an moderately easy dinner. Made with 2 lb. ground beef, 1 medium onion, 1 can pinto beans, 1 can kidney beans and 1 can whole corn, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute beef and onion in a heavy skillet until all pink is gone.
Add the beans, corn, hominy, chiles, Ro-Tel, tomatoes and broth.
Add taco mix and dressing mix.
Bring to a boil in a large kettle and simmer at least 45 minutes.
Serve with corn or tortilla chips.
