Mexican Rice Cornbread
Mexican Rice Cornbread is an moderately easy dinner. Made with 1 1/2 c. cornbread mix, 1 can cream-style corn, 2 jalapeño peppers, finely chopped, 1 c. milk and 2 tbsp. onion, finely chopped, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Mix all ingredients well.
Pour oil in bottom of a 13 x 9-inch pan and sprinkle with 2 teaspoons of cornmeal.
Stick pan in a 375° oven until hot; remove pan from oven and pour in batter. Return to oven and bake for 45 minutes.
(Could bake in muffin tins.)
