Mexican Rice is an moderately easy dinner. Made with 1 c. uncooked long-grain rice, 1/2 tsp. salt, 1 tbsp. vegetable oil, 1 small onion, chopped and 1/2 small green pepper, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cook rice according to package directions, salt included. Meanwhile, saute onion, pepper and garlic in vegetable oil until golden, stirring often and taking care not to burn.

When rice is done, add rice to cooked vegetables.

Stir and heat over medium-high heat.

Salt and pepper to taste.

Add 1 to 2 teaspoons chili powder and about 1/2 cup salsa.

Stir until blended well and salsa is absorbed into rice.
