Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 2 c. long grain rice, 1/3 c. low-fat shortening, 2 tsp. salt, 1 (16 oz.) can tomato wedges and 1/2 medium onion, sliced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In large skillet, pour in low-fat shortening.
Add rice.
Cook over medium heat until brown.
Add 4 cups water, tomatoes, sliced onion and garlic sauce.
Stir well.
Bring to boil; reduce heat and simmer for 20 minutes.
Serves 8.
