Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 3 tbsp. margarine, 1 1/4 c. uncooked rice, 1/2 c. chopped onion, 1/4 c. diced green pepper and 1 clove garlic, crushed, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Melt margarine in large pan.
Add rice, onion, pepper and garlic.
Cook until rice is brown.
Add hot water, tomatoes, salt and chili powder.
Bring to a boil.
Cover and cook over low heat until liquid is absorbed and the rice is tender, about 35 minutes. Makes 7 servings.
