Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 2/3 c. chopped onion, 3 tbsp. bacon grease, 1 c. raw converted rice, 1 c. chopped green pepper and 1 tsp. chili powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In medium size heavy skillet (with tight fitting lid), saute onion in hot bacon grease. Stir in rice, green pepper, chili powder, tomatoes, salt and sugar.
Add 2 cups water. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until liquid is absorbed and rice is done.
