Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1/2 c. onion, chopped, 1/4 c. diced carrots, 2 cloves garlic, minced, 1 tbsp. oil and 3/4 c. long grain rice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a medium saucepan, saute first 4 ingredients for 3 minutes. Add rice; cook 1 minute and stir often.
Add water, sauce, tomatoes and chilies.
Cover.
Reduce heat to low.
Simmer 20 to 30 minutes until rice is tender and liquid is absorbed.
Let stand covered (off heat) 5 minutes.
Serve hot.
