Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 5 tbsp. oil, 1 onion, chopped, 2 cloves garlic, chopped, 2 c. rice (uncooked) and 2 c. canned tomatoes with juice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a large skillet, heat oil over medium heat.
Saute onion, garlic and rice in oil, stirring constantly, until rice is golden brown.
Break up tomatoes into small pieces.
`Add tomatoes and juice and chicken stock to the rice.
Stir only enough to mix. Cover and simmer 20 to 30 minutes, until rice is tender and liquid is absorbed.
Do not uncover or stir during cooking time.
