Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1 c. long grain rice, 3 tbsp. oil, 1/2 small onion, chopped, 1 clove garlic, minced and 1 small tomato or 3 oz. tomato sauce, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Saute the rice in hot oil until golden brown.
Add onion, garlic and vegetables.
Cook slightly.
Add boiling stock, salt and tomato sauce.
Return to a boil, then lower heat, cover and cook on low heat for about 25 minutes or until rice is tender and the liquid has absorbed.
