Mexican Rice is an moderately easy dinner. Made with 2 c. uncooked rice, 1 (8 oz.) can tomato sauce, 1 small onion, diced, 2 cubes chicken bouillon and salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

The rice should be washed until the water is clear.

Let it drain.

Heat oil and cook the rice for about 15 minutes.

Add onion with salt and pepper.

Cook 2 to 3 minutes.

Next, add tomato sauce.

Cook 1 to 2 minutes, then add water and chicken bouillon.

Dissolve the chicken bouillon completely.

Cook until water is absorbed, then add green peppers to top of rice and cover it with aluminum.

Cook for 5 to 10 more minutes, until rice is tender.
