Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1/2 c. chopped onion, 1/4 c. diced carrot, 2 cloves garlic, minced, 1 tbsp. oil and 3/4 c. long grain rice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In medium saucepan, saute onion, carrot and garlic in oil for 3 minutes.
Add rice; cook and stir 1 minute.
Stir in water, picante sauce and diced tomatoes and green chilies.
Cover; reduce heat to low.
Simmer for 20 to 25 minutes, or until all liquid is absorbed and rice is tender.
Let stand, covered, for 5 minutes. Serves 4.
