Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1 c. rice (raw), 1 clove garlic, minced or chopped, 1 bell pepper, chopped, 1 small onion, chopped and 1 tbsp. oil or bacon drippings, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute garlic, onion and bell pepper in oil until tender-crisp. Add rice and brown slightly.
Add tomatoes, then liquid.
Add 1 teaspoon chili powder and salt and pepper to taste.
Bring to boil, cover and simmer for 15 minutes or until done.
