Mexican Rice

Mexican Rice is an moderately easy dinner. Made with 1 c. long grain rice, 1/4 onion, cut in rings, 2 tbsp. oil, 1 clove garlic, minced and 1 3/4 c. hot chicken broth, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a medium saucepan, saute sliced onion in oil until tender. Remove and set aside.

Saute chopped onion and garlic in remaining oil until tender.

Add rice.

Cook and stir until golden.

Stir in chicken broth, tomatoes, salt and cumin.

Arrange sliced onion and green pepper on top.

Cover.

Simmer over low heat for about 25 minutes, until rice is tender and liquid is absorbed.
