Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1/4 c. finely chopped onion, 1 small clove garlic, minced, 1 c. uncooked rice, 3 tbsp. cooking oil and 1/2 tsp. chili powder, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Add onion, garlic and rice to hot oil in heavy saucepan.
Fry about 3 minutes or until golden brown, stirring occasionally. Stir in a mixture of chili powder and salt.
Add water; stir. Cover tightly.
Bring to boiling and simmer until rice is tender, about 25 minutes.
Makes about 8 servings.
