Mexican Creamed Corn
Mexican Creamed Corn is an moderately easy dinner. Made with 1 (10 oz.) frozen kernel corn, 1/4 chopped green pepper, 1/4 chopped sweet red pepper, 1/4 chopped celery and 1/4 c. reduced-calorie soft-style cream cheese, this recipe delivers authentic, satisfying flavors. In a medium saucepan, combine corn, green pepper, red pepper, celery and 1/2 cup water.
Cook about 5 minutes or until corn is tender.
Drain.
Stir in cream cheese, chili peppers, milk, 1/4 teaspoon salt and dash of pepper.
Heat through.
Makes 4 servings. Per serving
