Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 2 1/2 c. cornmeal, 1/2 c. flour, 1 small can creamed corn, 2/3 c. wesson oil and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix cornmeal, flour, creamed corn, Wesson oil, eggs, baking soda and jalapeño in large mixing bowl.
Mix well.
Pour 1/2 cornbread mixture into an 8-inch skillet.
Cover mixture with shredded cheese.
Pour remaining mixture on top.
Bake at 375° until golden brown.
