Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 c. buttermilk, 1 c. self rising corn meal, 1 c. self rising flour, 1/4 c. sugar and 1 egg, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cook, drain and crumble sausage and beef.
Mix first five ingredients together.
Add hot pepper.
Pour 1/2 of mixture in heated iron skillet.
Sprinkle sausage and ground beef mixture over corn bread mixture, Sprinkle grated cheese on top of beef mixture, then corn and chopped onions.
Spread remainder of cornbread over top and bake at 350 degrees for 35 minutes or until golden brown.
