Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 1/2 c. self-rising meal, 3 eggs, well beaten, 8 oz. cream-style corn, 1/2 c. cooking oil and 2 large pods hot green peppers, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Mix all ingredients together, except cheese.
Pour 1/2 of batter into a well-greased and floured skillet.
Sprinkle in cheese (make sure none of the cheese touches the edge of the pan), then pour in rest of batter.
Cook at 375Β° until golden brown, 45 to 50 minutes.
