Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 lb. hamburger, 1 c. shredded cheese, 1/4 c. water, 2 eggs and 2 pkg. cornbread mix (i use jiffy), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown hamburger; drain excess grease.
Add chilies, onion, water and taco seasoning and simmer about 15 minutes.
Mix cornbread, corn, eggs and milk.
Pour 1/2 mixture into a 13 x 9-inch cake pan.
Top with hamburger mix and cheese.
Add rest of cornbread mix.
Bake at 350Β° for 1 hour.
