Mexican Cornbread is an moderately easy dinner. Made with 1 1/2 c. cornmeal, 1 tsp. salt, 1/2 c. grated cheese, 1/2 c. cooking oil and 1 can cream-style corn, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large mixing bowl, place cornmeal, corn, onions, cheese, salt, baking powder and red pepper.

Mix lightly.

Make a well in the dry ingredients and add eggs, oil and milk.

Mix and pour into a well-greased 13 x 8-inch pan.

Bake at 350Β° for 1 1/2 hours. Cut and serve.

Yields 24 small pieces.
