Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 c. milk, 1 lb. ground beef, 1 can cream corn, 1 1/2 c. shredded cheese and 1 c. cornmeal, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown meat and set aside.
Shred cheese and set aside.
Mix cornmeal, corn, eggs, milk, salt, soda and baking powder.
Add most of bacon grease.
In a 10-inch iron skillet, pour 2 tablespoons of bacon grease, put in half the batter.
Put meat on top, add cheese, onion and pepper.
Put other half batter on top. Bake 45 minutes at 350° or until done.
