Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 1/2 c. cornmeal, 1 c. chopped onions, 3 eggs, beaten, 1 c. cream-style corn and 2/3 c. salad oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 375Β°.
Combine cornmeal, onions, eggs, corn, oil, buttermilk, peppers and salt and mix until well blended. Spoon half of mixture into greased loaf pan (9 x 5 x 3-inch). Sprinkle with half the cheese.
Repeat layers, ending with cheese. Bake for 45 minutes or until done.
Slice.
