Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 1 large can yellow cream-style corn, 1 1/2 c. yellow corn meal, 3 tsp. salt, 2 eggs and 2/3 c. vegetable oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Rubber gloves when you chop jalapeño pepper.
Mix all ingredients except cheese.
Pour 1/2 batter into hot greased iron skillet.
Sprinkle half of grated cheese on top. Pour remaining batter and sprinkle remaining cheese on top. Bake at 350° for 45 to 55 minutes.
