Mexican Cornbread
Mexican Cornbread is an moderately easy dinner. Made with 2 pkg. plain cornbread mix, 1 pkg. mexican cornbread mix, 1 lb. ground meat, 1/2 onion, chopped and 1 can whole corn, drained, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown meat and onion; drain excess fat and set aside.
Combine cornbread mixes together according to directions on box. Additionally, add 1/3 cup milk and can of corn to the cornbread mixes.
Using a nonstick spray, prepare a 9 x 13-inch baking pan. Pour a small amount of cornbread batter in pan to form a layer. Sprinkle meat mixture on top and then sprinkle grated cheese on top of the meat.
Pour remaining cornbread mix on top of all and bake according to box directions.
