Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 1/2 c. yellow corn meal, 1/2 c. oil, 2 eggs, 1 c. buttermilk and 1 onion, minced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Spray an oblong baking dish with Pam.
Brown meat.
Add seasonings and peppers; set aside.
Then add all other ingredients, except cheese, in a bowl.
Pour half of mixture into pan, then top with meat mixture and half of cheese, then repeat corn meal mixture and cheese.
Bake for 45 minutes to 1 hour at 350°.
