Mexican Corn Bread
Mexican Corn Bread is an moderately easy dinner. Made with 1 c. yellow cornmeal, 1/2 c. bacon drippings, 1/2 tbsp. soda, 2 eggs, beaten and 1 lb. hamburger meat, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown hamburger; set aside.
Sprinkle cornmeal in greased skillet and brown.
Mix all except cheese, onion, peppers and beef together to form batter.
Pour 1/2 batter mixture into skillet.
On top of this add beef.
Sprinkle Cheddar cheese.
Sprinkle with chopped onion and pepper.
Top with remaining batter and bake 45 minutes in a 350° oven.
